- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
- Olive oil for frying
Instructions
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
- Set up a breading station: In one shallow dish, place the flour. In a second dish, beat the eggs. In a third dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and pepper.
- Dredge each chicken breast in flour, shaking off the excess, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
- In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. You may need to do this in batches.
- Transfer the cooked chicken to a baking dish. Spoon marinara sauce over each piece, then sprinkle with shredded mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves before serving.
Notes
- For extra flavor, allow the chicken to marinate in the seasoning for 30 minutes before breading.
- Serve with pasta or a side salad for a complete meal.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
