Description

Chicken Parmesan Puff Pillows are a delightful combination of tender chicken, rich marinara, and melted cheeses all wrapped in flaky puff pastry for a satisfying meal or snack.


Ingredients

  • 2 boneless, skinless chicken breasts (approximately 450 grams), diced
  • 1 cup (240 millilitres) marinara sauce
  • 1 cup (100 grams) shredded mozzarella cheese
  • 1/2 cup (50 grams) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 sheet puff pastry (thawed, approximately 250 grams)
  • 2 tablespoons (30 millilitres) olive oil, divided

Instructions

  1. Preheat oven to 200°C and line a baking sheet with parchment paper.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté diced chicken until golden brown and cooked through, about 6–8 minutes.
  3. Stir in marinara sauce and Italian seasoning with the chicken. Simmer for 5 minutes, then remove from heat and mix in mozzarella and Parmesan cheese until thoroughly combined.
  4. Roll out puff pastry on a floured surface and cut into 10 × 10 cm squares.
  5. Place a generous spoonful of chicken mixture onto the center of each pastry square. Fold corners over the filling and press edges with a fork to seal.
  6. Transfer pillows to the prepared baking sheet. Brush tops with remaining olive oil and bake for 15–20 minutes, or until pastry is golden brown.

Notes

  • Make sure to thaw the puff pastry before using for easier handling.
  • You can add additional seasonings to the chicken mixture as per taste.
  • Serve with extra marinara sauce on the side for dipping.
