Chicken Yakitori is a delicious Japanese dish featuring juicy grilled chicken skewers coated in a savory-sweet tare glaze.

- 1 lb boneless chicken thighs, cut into bite-sized pieces
- 1/4 cup soy sauce
- 1/4 cup mirin (Japanese sweet rice wine)
- 2 tbsp sake
- 1 tbsp sugar
- 1 clove garlic, minced
- 1 tsp grated ginger
- Bamboo skewers, soaked in water for 30 minutes
- Optional: chopped spring onions or scallions for garnish
Instructions
- In a small saucepan, combine soy sauce, mirin, sake, sugar, garlic, and ginger. Bring to a boil, then reduce heat and simmer for 10 minutes until slightly thickened. Set aside to cool.
- Thread chicken pieces onto the soaked bamboo skewers.
- Preheat a grill or grill pan over medium-high heat. Lightly oil the grates.
- Grill the chicken skewers for about 3-4 minutes per side, brushing with the sauce during the last few minutes of cooking to caramelize.
- Continue turning and basting until chicken is fully cooked and glossy with the tare glaze.
- Serve hot, optionally garnished with chopped spring onions.

- Ensure the bamboo skewers are soaked to prevent burning during grilling.
- For extra flavor, marinate the chicken pieces in the sauce for a few hours before grilling.
