- 2 large cucumbers, diced
- 1 cup lump crab meat
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon fresh dill, chopped
- 1 tablespoon chives, chopped
- Salt and pepper to taste
Instructions
- Combine diced cucumbers and crab meat in a large bowl.
- Whisk together mayonnaise, lemon juice, dill, chives, salt and pepper in a separate bowl.
- Pour the dressing over the cucumber and crab mixture and gently toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving. Enjoy as a refreshing appetizer or light meal.
Notes
Drain cucumbers on paper towels before mixing to avoid watery dressing. Adjust seasoning to taste.
