Description

A refreshing, no-cook salad combining lump crab meat, diced cucumbers, and a creamy mayo-lemon dressing. Perfect for hot days.


Ingredients

  • 2 large cucumbers, diced
  • 1 cup lump crab meat
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon chives, chopped
  • Salt and pepper to taste

Instructions

  1. Combine diced cucumbers and crab meat in a large bowl.
  2. Whisk together mayonnaise, lemon juice, dill, chives, salt and pepper in a separate bowl.
  3. Pour the dressing over the cucumber and crab mixture and gently toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving. Enjoy as a refreshing appetizer or light meal.

Notes

Drain cucumbers on paper towels before mixing to avoid watery dressing. Adjust seasoning to taste.
