- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 tablespoon granulated sugar
- 2 (8-ounce) packages of cream cheese, softened
- 1 cup granulated sugar
- ½ teaspoon vanilla extract
- 2 large eggs
- 1 cup semi-sweet chocolate chips
- ¼ teaspoon salt
Instructions
- Preheat your oven to 325°F (163°C). Line a 9×9 inch baking pan with parchment paper, leaving overhang on the sides for easy removal later.
- In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.
- Firmly press the crumb mixture into the bottom of the prepared baking pan to create an even layer.
- In a large mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and creamy.
- Mix in the vanilla extract, ensuring it’s well incorporated.
- Add the eggs one at a time, mixing just until combined. Be careful not to overmix.
- Gently fold in the semi-sweet chocolate chips until evenly distributed throughout the mixture.
- Pour the cheesecake filling over the prepared crust, spreading it out evenly.
- Place in the preheated oven and bake for 30-35 minutes, or until the edges are set and the center wobbles slightly.
- Remove from the oven and allow the bars to cool in the pan for about 25 minutes. Transfer to the refrigerator and chill for at least 2 hours before cutting into squares.
