Description

Chocolate-Covered Banana Pudding Stuffed Puffs are delightful pastries filled with creamy banana pudding and coated in rich chocolate.


Ingredients

  • 1 cup water
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • ¼ tsp salt
  • 4 large eggs
  • 2 cups milk
  • ½ cup sugar
  • ⅓ cup cornstarch
  • ¼ tsp salt
  • 2 large egg yolks
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1 ripe banana, mashed
  • 8 oz semi-sweet chocolate (or chocolate chips)
  • 1 tbsp coconut oil (optional, for a silky smooth finish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, bring water and butter to a boil. Stir in flour and salt, mixing until it forms a ball.
  3. Remove from heat and let cool for 5 minutes. Beat in eggs one at a time until smooth and glossy.
  4. Spoon or pipe small mounds onto a baking sheet lined with parchment paper.
  5. Bake for 25–30 minutes until puffed and golden. Let cool completely, then cut a small slit to release steam.
  6. In a saucepan, whisk together milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly.
  7. Whisk egg yolks in a separate bowl. Gradually mix in a small amount of the hot milk to temper, then return to the pot.
  8. Continue to cook until thickened. Remove from heat and stir in butter, vanilla, and mashed banana. Cool completely before filling.
  9. Slice each puff in half or poke a hole in the bottom. Pipe or spoon banana pudding into the centers. Chill for 15–20 minutes to set.
  10. Melt chocolate (and coconut oil, if using) in the microwave or a double boiler until smooth.
  11. Dip the tops of the stuffed puffs into the chocolate and place them on a tray lined with parchment paper. Let the chocolate set at room temp or chill for quicker results.

Notes

  • Make sure to let the puff pastry cool completely to avoid melting the pudding filling.
  • If desired, decorate with additional banana slices or chocolate drizzles.
