Chocolate-Covered Banana Pudding Stuffed Puffs are delightful pastries filled with creamy banana pudding and coated in rich chocolate.

- 1 cup water
- ½ cup unsalted butter
- 1 cup all-purpose flour
- ¼ tsp salt
- 4 large eggs
- 2 cups milk
- ½ cup sugar
- ⅓ cup cornstarch
- ¼ tsp salt
- 2 large egg yolks
- 2 tbsp butter
- 1 tsp vanilla extract
- 1 ripe banana, mashed
- 8 oz semi-sweet chocolate (or chocolate chips)
- 1 tbsp coconut oil (optional, for a silky smooth finish)
Instructions
- Preheat oven to 400°F (200°C).
- In a saucepan, bring water and butter to a boil. Stir in flour and salt, mixing until it forms a ball.
- Remove from heat and let cool for 5 minutes. Beat in eggs one at a time until smooth and glossy.
- Spoon or pipe small mounds onto a baking sheet lined with parchment paper.
- Bake for 25–30 minutes until puffed and golden. Let cool completely, then cut a small slit to release steam.
- In a saucepan, whisk together milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly.
- Whisk egg yolks in a separate bowl. Gradually mix in a small amount of the hot milk to temper, then return to the pot.
- Continue to cook until thickened. Remove from heat and stir in butter, vanilla, and mashed banana. Cool completely before filling.
- Slice each puff in half or poke a hole in the bottom. Pipe or spoon banana pudding into the centers. Chill for 15–20 minutes to set.
- Melt chocolate (and coconut oil, if using) in the microwave or a double boiler until smooth.
- Dip the tops of the stuffed puffs into the chocolate and place them on a tray lined with parchment paper. Let the chocolate set at room temp or chill for quicker results.
Notes
- Make sure to let the puff pastry cool completely to avoid melting the pudding filling.
- If desired, decorate with additional banana slices or chocolate drizzles.
- Store in the refrigerator for up to 2 days for the best taste and freshness.
