Description

A delightful sandwich made with rich chocolate ganache and smooth caramel, perfect for satisfying your sweet cravings.


Ingredients

Scale
  • 1 cup heavy cream
  • 8 oz semi-sweet or dark chocolate, chopped
  • 1/2 cup granulated sugar
  • 2 tablespoons water
  • 1/4 cup heavy cream (for caramel)
  • 2 tablespoons unsalted butter
  • Pinch of salt
  • 12 soft cookies or shortbread rounds (for assembling sandwiches)

Instructions

  1. To make ganache, heat 1 cup heavy cream in a saucepan over medium heat until it just begins to simmer.
  2. Remove from heat and pour over chopped chocolate in a bowl. Let sit for 2 minutes, then stir until smooth. Set aside to cool and thicken slightly.
  3. For the caramel, in a saucepan, combine sugar and water over medium heat. Stir until sugar dissolves, then stop stirring and let it simmer until it turns golden brown.
  4. Carefully add 1/4 cup heavy cream and butter to the caramel (it will bubble). Stir until smooth, then add a pinch of salt. Let cool slightly.
  5. To assemble, spread a layer of ganache on the flat side of one cookie, then a layer of caramel. Top with another cookie to form a sandwich.
  6. Repeat with remaining cookies. Chill for 10–15 minutes to set, or enjoy immediately.

Notes

  • Use store-bought soft cookies or bake your own for a homemade touch.
  • Let the ganache and caramel cool slightly to avoid overly runny fillings.
  • Sprinkle a bit of sea salt over the caramel for a salted caramel twist.
