Description

Delicious and chewy Chocolate Mint Cookies combining rich chocolate with refreshing mint flavor.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup crushed mint candies or chocolate mint pieces (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper for easy cleanup.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and peppermint extracts.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips and crushed mint candies (if using).
  6. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets, leaving space between each cookie.
  7. Bake for 10-12 minutes, or until the edges are set and slightly golden. The centers should remain soft.
  8. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a stronger mint flavor, increase the peppermint extract to 1 1/2 tsp.
