- 1 cup butter (softened)
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsweetened cocoa powder
- 1 1/2 cups semi-sweet chocolate chips
- 1/2 cup crushed mint candies or chocolate mint pieces (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper for easy cleanup.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and peppermint extracts.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips and crushed mint candies (if using).
- Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are set and slightly golden. The centers should remain soft.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger mint flavor, increase the peppermint extract to 1 1/2 tsp.
- Ensure not to overbake the cookies for a chewy texture.
- Store cookies in an airtight container for up to a week.
