Description

Chocolate Mousse Brownies are rich, indulgent brownies topped with a light and airy chocolate mousse, making for a delightful dessert.

Ingredients

Scale
  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup (240ml) heavy cream
  • 4 ounces (115g) semi-sweet chocolate, chopped
  • 2 large eggs, separated
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Shaved chocolate or chocolate curls (for garnish)
  • Fresh berries (for garnish)
  • Whipped cream (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan and line it with parchment paper.
  2. In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the sugar, eggs, and vanilla until smooth.
  3. Sift in the cocoa powder, flour, salt, and baking powder. Stir until just combined. Do not overmix.
  4. Pour the batter into the prepared baking pan and spread it evenly.
  5. Bake for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.
  6. In a small saucepan, heat half of the heavy cream until it’s just about to simmer. Remove from heat, add the chopped chocolate, and stir until melted and smooth. Set aside to cool slightly.
  7. In a bowl, whisk the egg yolks and sugar together until pale and thick. Stir in the melted chocolate mixture and vanilla extract.
  8. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions.
  9. In another bowl, whip the remaining heavy cream until soft peaks form. Carefully fold the whipped cream into the chocolate mixture until fully combined.
  10. Once the brownies are completely cool, spread the chocolate mousse evenly over the brownie base.
  11. Refrigerate the dessert for at least 2 hours, or until the mousse is set.
  12. Once set, remove the brownies from the pan using the parchment paper. Cut into squares and serve with optional garnishes like shaved chocolate, fresh berries, or a dollop of whipped cream.

Notes

  • Ensure the brownies are fully cooled before adding the mousse to prevent melting.
  • For a richer taste, use high-quality semi-sweet chocolate.
  • Garnish options can be varied based on personal preference.
