Ingredients

  • 6 oz dark chocolate, chopped
  • 3 large eggs, separated
  • ¼ cup sugar, divided
  • 1 cup heavy cream
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

  1. Place chopped chocolate in a heatproof bowl and melt over a double boiler or in the microwave in short bursts, stirring until smooth. Let it cool slightly.
  2. In a clean bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add half the sugar and continue beating until stiff, glossy peaks form.
  3. In another bowl, beat the egg yolks with the remaining sugar until pale and thick. Stir in the melted chocolate and vanilla extract until smooth.
  4. In a separate bowl, beat the heavy cream until soft peaks form.
  5. Gently fold the whipped cream into the chocolate-yolk mixture. Then carefully fold in the egg whites in batches, just until incorporated—don’t overmix.
  6. Spoon mousse into serving glasses or bowls. Refrigerate for at least 2 hours or until set.
  7. Top with whipped cream, chocolate shavings, or berries if desired.

Notes

  • Make sure the chocolate is fully melted and slightly cooled before mixing with the eggs.
  • Be careful not to overmix the mousse after folding in the egg whites; this helps keep it light and airy.
