- 6 oz dark chocolate, chopped
- 3 large eggs, separated
- ¼ cup sugar, divided
- 1 cup heavy cream
- ½ tsp vanilla extract
- Pinch of salt
Instructions
- Place chopped chocolate in a heatproof bowl and melt over a double boiler or in the microwave in short bursts, stirring until smooth. Let it cool slightly.
- In a clean bowl, beat egg whites with a pinch of salt until soft peaks form. Gradually add half the sugar and continue beating until stiff, glossy peaks form.
- In another bowl, beat the egg yolks with the remaining sugar until pale and thick. Stir in the melted chocolate and vanilla extract until smooth.
- In a separate bowl, beat the heavy cream until soft peaks form.
- Gently fold the whipped cream into the chocolate-yolk mixture. Then carefully fold in the egg whites in batches, just until incorporated—don’t overmix.
- Spoon mousse into serving glasses or bowls. Refrigerate for at least 2 hours or until set.
- Top with whipped cream, chocolate shavings, or berries if desired.

- Make sure the chocolate is fully melted and slightly cooled before mixing with the eggs.
