Ingredients

  • Chocolate Digestive Biscuits: 200g, crushed (or graham crackers for a different flavor)
  • Unsalted Butter: 100g, melted
  • Cream Cheese: 500g, at room temperature
  • Granulated Sugar: 150g
  • Sour Cream: 200g
  • Dark Chocolate: 200g, melted (70% cocoa for richness)
  • Orange Zest: From 2 oranges
  • Orange Juice: 60ml (freshly squeezed for the best flavor)
  • Eggs: 3 large
  • Vanilla Extract: 1 teaspoon
  • Dark Chocolate Ganache: 100g dark chocolate and 100ml heavy cream
  • Orange Segments: For garnish
  • Chocolate Shavings: Optional, for decoration

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the crushed chocolate biscuits and melted butter until well blended.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake for 10 minutes, then set aside to cool.
  4. In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy.
  5. Add the sour cream, melted dark chocolate, orange zest, orange juice, and vanilla extract. Mix until fully combined.
  6. Add the eggs one at a time, mixing gently after each addition until just incorporated. Avoid overmixing to keep the texture light.
  7. Pour the cheesecake filling over the cooled crust in the springform pan.
  8. Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center still has a slight jiggle.
  9. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually, which helps prevent cracking.
  10. Once cooled, remove the cheesecake from the oven and let it cool at room temperature for 30 minutes.
  11. Cover and refrigerate for at least 4 hours, preferably overnight, to allow it to set completely.
  12. In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add the dark chocolate. Stir until smooth and glossy.
  13. Allow the ganache to cool slightly before pouring it over the chilled cheesecake.
  14. Carefully remove the cheesecake from the springform pan.
  15. Top with orange segments and chocolate shavings for an elegant presentation.
