Delicious donuts stuffed with creamy peanut butter and topped with a rich chocolate glaze and peanut butter cups.

- 1 cup warm milk (about 105-115°F)
- 2 and 1/4 teaspoons active dry yeast (one packet)
- 1/4 cup granulated sugar
- 3 and 1/2 cups all-purpose flour, plus more for dusting
- 1 teaspoon salt
- 1 large egg, at room temperature
- 1/4 cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 2 tablespoons milk or cream, as needed
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 cup chopped peanut butter cups
- 1/4 cup chopped roasted peanuts (optional)
Instructions
- In a large bowl, combine the warm milk, yeast, and 1 tablespoon of the granulated sugar. Let it sit for 5-10 minutes until foamy.
- Add the remaining granulated sugar, flour, salt, egg, melted butter, and vanilla extract to the yeast mixture. Mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
- Lightly grease a clean bowl and place the dough inside, turning to coat. Cover and let rise for 1 to 1 and a half hours, or until doubled in size.
- While the dough rises, prepare the peanut butter filling by whisking together peanut butter, powdered sugar, and salt. Gradually add milk or cream until smooth.
- Once the dough has doubled, gently punch it down and roll it out to about 1/2 inch thick. Cut out donut shapes.
- Transfer the cut donuts to a baking sheet, cover loosely, and let rise for another 30-45 minutes.
- Heat vegetable oil in a pot to 350-375°F. Fry the donuts for 1-2 minutes per side until golden brown.
- Remove fried donuts and place on a wire rack to cool completely.
- For the glaze, melt chocolate chips and heavy cream until smooth. Dip the top of each donut in glaze.
- Pipe the peanut butter filling into each donut and sprinkle with chopped peanut butter cups and peanuts. Serve immediately.
