Description

Delicious donuts stuffed with creamy peanut butter and topped with a rich chocolate glaze and peanut butter cups.

Ingredients

Scale
  • 1 cup warm milk (about 105-115°F)
  • 2 and 1/4 teaspoons active dry yeast (one packet)
  • 1/4 cup granulated sugar
  • 3 and 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 large egg, at room temperature
  • 1/4 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 2 tablespoons milk or cream, as needed
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 cup chopped peanut butter cups
  • 1/4 cup chopped roasted peanuts (optional)

Instructions

  1. In a large bowl, combine the warm milk, yeast, and 1 tablespoon of the granulated sugar. Let it sit for 5-10 minutes until foamy.
  2. Add the remaining granulated sugar, flour, salt, egg, melted butter, and vanilla extract to the yeast mixture. Mix until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Lightly grease a clean bowl and place the dough inside, turning to coat. Cover and let rise for 1 to 1 and a half hours, or until doubled in size.
  5. While the dough rises, prepare the peanut butter filling by whisking together peanut butter, powdered sugar, and salt. Gradually add milk or cream until smooth.
  6. Once the dough has doubled, gently punch it down and roll it out to about 1/2 inch thick. Cut out donut shapes.
  7. Transfer the cut donuts to a baking sheet, cover loosely, and let rise for another 30-45 minutes.
  8. Heat vegetable oil in a pot to 350-375°F. Fry the donuts for 1-2 minutes per side until golden brown.
  9. Remove fried donuts and place on a wire rack to cool completely.
  10. For the glaze, melt chocolate chips and heavy cream until smooth. Dip the top of each donut in glaze.
  11. Pipe the peanut butter filling into each donut and sprinkle with chopped peanut butter cups and peanuts. Serve immediately.

Notes

  • Ensure the oil temperature is correct for optimal frying results.
  • Do not rush the rising times for fluffy donuts.
  • Filling can be adjusted for desired sweetness.
