Delicious cupcakes filled with strawberry jam, topped with a rich chocolate ganache.

- 1/2 cup unsweetened cocoa powder
- 3/4 teaspoon baking powder

- 2 large eggs
- 1 cup granulated sugar

- 1/2 cup whole milk
- 1 teaspoon pure vanilla extract
- 1/2 cup hot water or brewed coffee
- 1/2 cup strawberry jam
- 1 cup heavy cream
- 8 oz dark or semi-sweet chocolate
- 1 cup unsalted butter
- 2 1/2 cups powdered sugar
- 1/4 cup strawberry puree
- 1/2 teaspoon vanilla extract
- 1 pinch salt
Instructions
- Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
- Sift together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl whisk eggs and sugar until light, then mix in oil, milk, and vanilla.
- Gradually add the dry ingredients into the wet mixture.
- Slowly stir in hot water or brewed coffee until batter becomes smooth.
- Fill cupcake liners about two-thirds full and bake 18 to 22 minutes.
- Cool cupcakes completely on a wire rack.
- Remove a small center from each cupcake and fill with 1 teaspoon strawberry jam.
- Prepare ganache by heating cream and pouring it over chopped chocolate, then stir until smooth.
- Frost cupcakes and decorate with strawberries or chocolate shavings if desired.
Notes
- Ensure the cupcakes are completely cool before filling them with jam.
- You can use any brand of jam you prefer for the filling.
- For a stronger chocolate flavor, use brewed coffee instead of water.
