Ingredients

- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 2 cups kale, chopped
- 1 cup bell peppers (any color), diced
- 1/2 cup feta cheese, crumbled
- 2 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Wash and dry all vegetables thoroughly.
- Dice cherry tomatoes, cucumber, bell peppers, and red onion into small pieces.
- Remove tough stems from kale; chop into bite-sized pieces and massage lightly.
- In a large bowl, combine all chopped veggies and sprinkle with crumbled feta cheese.
- In a small bowl, whisk together olive oil and lemon juice; drizzle over the salad before serving.
- Toss gently to coat all ingredients evenly; adjust seasoning as needed.
