Ingredients
Scale
- 1 cup fresh cranberries
- 1/2 cup sugar
- 1 cup cream cheese, softened
- 1 cup whipped cream
- 1 teaspoon vanilla extract
- 1 cup gingerbread cookies, crushed
- 1/2 cup pecans, chopped
- Mint leaves for garnish
Instructions
- In a small saucepan, combine fresh cranberries and sugar over medium heat. Cook for about 5-7 minutes, stirring occasionally, until the cranberries burst and the mixture thickens. Remove from heat and let cool.
- In a mixing bowl, beat the softened cream cheese until smooth. Gently fold in the whipped cream and vanilla extract until well combined.
- To assemble the trifle cups, start by placing a layer of crushed gingerbread cookies at the bottom of each cup. Add a layer of the cream cheese mixture, followed by a layer of the cranberry sauce. Repeat the layers until the cups are filled, finishing with a layer of whipped cream on top.
- Sprinkle chopped pecans over the whipped cream and garnish with mint leaves for a festive touch.
Notes
- Make sure the cream cheese is at room temperature for easier mixing.
- You can substitute gingerbread cookies with any cookie of your choice.
- This dessert can be made a few hours in advance and refrigerated before serving.
