Delicious white chocolate truffles filled with cranberries and pistachios, perfect for the holiday season.
Ingredients

- 340g white chocolate (high quality, chopped)
- 120ml heavy cream
- 1 tablespoon unsalted butter
- 60g dried cranberries (finely chopped)
- 60g shelled pistachios (finely chopped)
- 1 teaspoon vanilla extract
- 1 pinch salt
- 100g powdered sugar (for rolling)
Instructions
- Chop the white chocolate finely and place it in a heatproof bowl.
- In a small saucepan, heat the cream and butter over medium heat until just simmering.
- Pour the hot cream mixture over the chopped chocolate. Let it sit for 2 minutes.
- Stir gently until smooth and glossy. If needed, place over a simmering water bath to finish melting.
- Stir in vanilla extract and a pinch of salt.
- Fold in chopped cranberries and pistachios evenly.
- Cover the bowl and chill the mixture for at least 2 hours or overnight.
- Scoop out portions and roll into smooth truffle balls.
- Roll each truffle in powdered sugar until fully coated.
- Store in the fridge in an airtight container. Let sit at room temperature for 5–10 minutes before serving.
Notes
- For a sweeter taste, adjust the amount of powdered sugar used for rolling.
- These truffles can be made a day in advance for better flavor.
