Description

A refreshing and nutritious salad made with quinoa, fresh vegetables, and a zesty cilantro lime dressing.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 red onion, diced

Instructions

  1. Rinse the quinoa under cold water. In a medium pot, bring 2 cups of water to a boil.
  2. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
  3. Whisk together lime juice, olive oil, garlic powder, salt, and pepper in a small bowl.
  4. Combine cooked quinoa, cilantro, cherry tomatoes, cucumber, and red onion in a large bowl.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve chilled or at room temperature.

Notes

  • For added flavor, consider including avocado or black beans.
  • This salad can be made ahead of time and stored in the refrigerator.
