Ingredients

- 1 cup quinoa
- 2 cups water
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/2 red onion, diced
Instructions
- Rinse the quinoa under cold water. In a medium pot, bring 2 cups of water to a boil.
- Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
- Whisk together lime juice, olive oil, garlic powder, salt, and pepper in a small bowl.
- Combine cooked quinoa, cilantro, cherry tomatoes, cucumber, and red onion in a large bowl.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- For added flavor, consider including avocado or black beans.
- This salad can be made ahead of time and stored in the refrigerator.
