Description
A zesty cilantro lime rice recipe that elevates any meal with its refreshing flavors.
Ingredients
Scale
- 1 cup jasmine rice, well rinsed
- 2 cups vegetable broth (homemade or store-bought)
- 1 tablespoon high-quality olive oil
- 1 clove garlic, finely minced
- Zest of 1 lime
- 2 tablespoons freshly squeezed lime juice
- 1/2 teaspoon ground cumin
- 1/4 cup fresh cilantro, finely chopped
- Salt and freshly ground black pepper to taste
Instructions
- In a medium-sized pot, heat the olive oil over medium heat. Once warm, add the minced garlic and sauté for about 30 seconds, or until fragrant and lightly golden.
- Add the rinsed jasmine rice to the pot, and toast the rice for about 1 minute, stirring frequently to enhance its nutty aroma.
- Pour in the vegetable broth and sprinkle in the ground cumin. Stir to combine, then bring to a vigorous boil.
- Once boiling, lower the heat to a gentle simmer and cover the pot with a lid.
- Allow the rice to simmer for approximately 15 minutes, or until tender and all liquid is absorbed. Remove from heat but keep covered for an additional 5 minutes to steam.
- Fluff the rice gently with a fork, then mix in the lime zest, lime juice, and finely chopped cilantro. Season with salt and pepper to taste.
- Serve warm as a side dish or base for protein or roasted vegetables.
Notes
- For a spicier kick, consider adding a chopped jalapeño or a pinch of red pepper flakes.
- This dish pairs well with grilled chicken, shrimp, or vegetarian options like black beans.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
