Description

A zesty cilantro lime rice recipe that elevates any meal with its refreshing flavors.

Ingredients

Scale
  • 1 cup jasmine rice, well rinsed
  • 2 cups vegetable broth (homemade or store-bought)
  • 1 tablespoon high-quality olive oil
  • 1 clove garlic, finely minced
  • Zest of 1 lime
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 teaspoon ground cumin
  • 1/4 cup fresh cilantro, finely chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a medium-sized pot, heat the olive oil over medium heat. Once warm, add the minced garlic and sauté for about 30 seconds, or until fragrant and lightly golden.
  2. Add the rinsed jasmine rice to the pot, and toast the rice for about 1 minute, stirring frequently to enhance its nutty aroma.
  3. Pour in the vegetable broth and sprinkle in the ground cumin. Stir to combine, then bring to a vigorous boil.
  4. Once boiling, lower the heat to a gentle simmer and cover the pot with a lid.
  5. Allow the rice to simmer for approximately 15 minutes, or until tender and all liquid is absorbed. Remove from heat but keep covered for an additional 5 minutes to steam.
  6. Fluff the rice gently with a fork, then mix in the lime zest, lime juice, and finely chopped cilantro. Season with salt and pepper to taste.
  7. Serve warm as a side dish or base for protein or roasted vegetables.

Notes

  • For a spicier kick, consider adding a chopped jalapeño or a pinch of red pepper flakes.
  • This dish pairs well with grilled chicken, shrimp, or vegetarian options like black beans.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
