Description

Ingredients

  • 1 ½ cups cinnamon graham cracker crumbs (or regular graham crackers + 1 tsp cinnamon)
  • ¼ cup brown sugar
  • ½ cup unsalted butter, melted
  • 24 oz (3 blocks) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ¾ cup sour cream
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup crushed cinnamon cereal (like Cinnamon Toast Crunch)
  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ cup cold unsalted butter, cubed

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil if baking in a water bath.
  2. In a bowl, mix the graham cracker crumbs, brown sugar, and melted butter until well combined. Press firmly into the bottom of the pan. Bake for 10 minutes, then set aside to cool.
  3. In a large bowl, beat the cream cheese until smooth and creamy. Add the sugar and vanilla and beat until combined.
  4. Add eggs one at a time, mixing on low speed. Stir in the sour cream, cinnamon, and salt just until blended—avoid overmixing.
  5. Pour the cheesecake filling over the cooled crust. Tap the pan gently to release air bubbles.
  6. Bake for 50–60 minutes, or until the center is just set and slightly jiggly. Turn off the oven, crack the door, and let it cool inside for 1 hour to prevent cracking.
  7. While the cheesecake cools, prepare the topping: Mix the crushed cereal, flour, brown sugar, and cinnamon in a bowl. Cut in the cold butter until crumbly.
  8. Sprinkle this mixture over the cheesecake, then bake at 350°F (175°C) for 10–12 minutes until the topping is golden and crisp.
  9. Let the cheesecake cool completely at room temperature, then chill for at least 4 hours or overnight before slicing.
