- 1 ½ cups cinnamon graham cracker crumbs (or regular graham crackers + 1 tsp cinnamon)
- ¼ cup brown sugar
- ½ cup unsalted butter, melted
- 24 oz (3 blocks) cream cheese, softened

- 1 teaspoon vanilla extract
- 3 large eggs
- ¾ cup sour cream
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ¾ cup crushed cinnamon cereal (like Cinnamon Toast Crunch)
- ¼ cup all-purpose flour
- ¼ cup brown sugar
- ½ teaspoon ground cinnamon
- ¼ cup cold unsalted butter, cubed
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil if baking in a water bath.
- In a bowl, mix the graham cracker crumbs, brown sugar, and melted butter until well combined. Press firmly into the bottom of the pan. Bake for 10 minutes, then set aside to cool.
- In a large bowl, beat the cream cheese until smooth and creamy. Add the sugar and vanilla and beat until combined.
- Add eggs one at a time, mixing on low speed. Stir in the sour cream, cinnamon, and salt just until blended—avoid overmixing.
- Pour the cheesecake filling over the cooled crust. Tap the pan gently to release air bubbles.
- Bake for 50–60 minutes, or until the center is just set and slightly jiggly. Turn off the oven, crack the door, and let it cool inside for 1 hour to prevent cracking.
- While the cheesecake cools, prepare the topping: Mix the crushed cereal, flour, brown sugar, and cinnamon in a bowl. Cut in the cold butter until crumbly.
- Sprinkle this mixture over the cheesecake, then bake at 350°F (175°C) for 10–12 minutes until the topping is golden and crisp.
- Let the cheesecake cool completely at room temperature, then chill for at least 4 hours or overnight before slicing.

- For a richer flavor, use full-fat cream cheese.
