Description

Cinnamon Sugar French Toast Muffins are a delightful treat that combines the flavors of traditional French toast in a convenient muffin form, perfect for breakfast or a sweet snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (Cinnamon Sugar Coating)
  • 1 teaspoon ground cinnamon (Cinnamon Sugar Coating)
  • 2 tablespoons unsalted butter, melted (Cinnamon Sugar Coating)

Instructions

  1. Set the oven to 350°F (175°C). Grease a 12-cup muffin tin with butter or nonstick spray.
  2. Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl.
  3. In a separate bowl, whisk melted butter, eggs, milk, and vanilla extract until smooth.
  4. Gradually fold wet ingredients into dry ingredients, stirring just until incorporated to avoid overmixing.
  5. Spoon batter evenly into prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes until tops are golden and a toothpick inserted comes out clean.
  7. Combine granulated sugar and cinnamon in a small bowl. Allow muffins to cool for 5 minutes after baking.
  8. Brush muffin tops with melted butter, then dip into cinnamon-sugar mixture to coat evenly.
  9. Serve muffins warm for optimal flavor and texture. Optionally enjoy with maple syrup.

Notes

  • Ensure not to overmix the batter to keep muffins light and fluffy.
  • These muffins are best enjoyed fresh but can be stored in an airtight container for a few days.
  • Optional: Top with a drizzle of melted chocolate or cream cheese frosting for an additional treat.
