Instructions
- In a large mixing bowl, whisk together the flour and eggs.
- Gradually add in the milk, stirring to combine.
- Add the melted butter, salt, and sugar (if making sweet crepes). Whisk until smooth.
- Let the batter rest for at least 30 minutes at room temperature, or refrigerate for up to 2 hours.
- Heat a lightly buttered non-stick skillet over medium-high heat.
- Pour about 1/4 cup of batter into the skillet and immediately tilt the pan in a circular motion to evenly coat the surface.
- Cook the crepe for 1–2 minutes, until the bottom is light golden brown.
- Loosen with a spatula, flip, and cook for another 30 seconds to 1 minute.
- Repeat with the remaining batter. Stack crepes and keep warm under foil.
- Fill with sweet options like Nutella, fresh fruit, whipped cream, or savory fillings like ham, cheese, and eggs. Fold or roll and serve immediately.

- For best results, let the batter rest to allow the flour to absorb the liquid.
- The crepes can be made ahead of time and stored in the refrigerator.
