Description

A refreshing and flavorful Classic Greek Salad made with fresh vegetables and topped with feta cheese and Kalamata olives.


Ingredients

  • 3 medium tomatoes, cut into wedges
  • 1 cucumber, peeled and sliced
  • 1 red onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • ½ cup Kalamata olives, pitted
  • ¾ cup feta cheese, cubed or crumbled
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • ½ tsp dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Wash and prepare all vegetables: cut tomatoes into wedges, slice cucumber into half-moons, and thinly slice onion and bell pepper.
  2. In a large salad bowl, combine the prepared vegetables.
  3. Gently fold in the Kalamata olives and feta cheese.
  4. In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.
  5. Drizzle the dressing over the salad mixture and toss gently to combine.
  6. Serve immediately for maximum freshness or chill briefly before serving.

Notes

  • For a more robust flavor, let the salad sit for about 10 minutes after tossing with the dressing.
  • Feel free to add other ingredients such as radishes or capers for variation.
