A refreshing and flavorful Classic Greek Salad made with fresh vegetables and topped with feta cheese and Kalamata olives.
Ingredients

- 3 medium tomatoes, cut into wedges
- 1 cucumber, peeled and sliced
- 1 red onion, thinly sliced
- 1 green bell pepper, thinly sliced
- ½ cup Kalamata olives, pitted
- ¾ cup feta cheese, cubed or crumbled
- 2 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- ½ tsp dried oregano
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Wash and prepare all vegetables: cut tomatoes into wedges, slice cucumber into half-moons, and thinly slice onion and bell pepper.
- In a large salad bowl, combine the prepared vegetables.
- Gently fold in the Kalamata olives and feta cheese.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.
- Drizzle the dressing over the salad mixture and toss gently to combine.
- Serve immediately for maximum freshness or chill briefly before serving.
Notes
- For a more robust flavor, let the salad sit for about 10 minutes after tossing with the dressing.
- Feel free to add other ingredients such as radishes or capers for variation.
- Best served fresh, but can be stored in the refrigerator for a day.
