- 1 tablespoon curry powder
- 1/2 teaspoon turmeric
- 2 stalks green onions (for topping)
- 1/4 cup fresh cilantro

Instructions
- Prepare ingredients: mince garlic, grate ginger, chop green onions.
- In a large pot over medium heat, sauté minced garlic and grated ginger until fragrant (about 2 minutes).
- Add boneless chicken thighs; season with salt and pepper. Brown on all sides for about 5-7 minutes.
- Pour in chicken broth and coconut milk; stir well and bring to a gentle boil.
- Add long-grain white rice, curry powder, and turmeric. Reduce heat to low; cover and simmer for about 20 minutes until rice is cooked.
- Remove from heat; fluff rice with a fork and stir in fresh cilantro.
