Ingredients

  • 4 white fish fillets (like cod or snapper)
  • Juice of 2 limes
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • ½ cup coconut milk
  • Zest of 1 lime
  • 2 garlic cloves, minced
  • ¼ tsp red pepper flakes (optional)
  • Fresh cilantro, chopped (for garnish)
  • 1 ripe avocado, diced
  • ¼ cup red onion, chopped
  • Handful of fresh cilantro, chopped
  • ½ cup cherry tomatoes, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. Whisk lime juice, zest, coconut milk, olive oil, garlic, red pepper flakes, salt, and pepper in a bowl. Add fish, coat well, cover, and chill for 15–20 minutes.
  2. Mix avocado, tomatoes, onion, lime juice, cilantro, salt, and pepper in a bowl. Toss gently and set aside.
  3. Heat a skillet over medium. Remove fish from marinade and cook 3–4 minutes per side, until it flakes easily.
  4. Top the fish with salsa and sprinkle with fresh cilantro. Add lime wedges.

  • For a spicier kick, increase the amount of red pepper flakes.
