Ingredients

- 4 white fish fillets (like cod or snapper)
- Juice of 2 limes
- 2 tbsp olive oil
- Salt and pepper, to taste
- ½ cup coconut milk
- Zest of 1 lime
- 2 garlic cloves, minced
- ¼ tsp red pepper flakes (optional)
- Fresh cilantro, chopped (for garnish)
- 1 ripe avocado, diced
- ¼ cup red onion, chopped
- Handful of fresh cilantro, chopped
- ½ cup cherry tomatoes, chopped
- Juice of 1 lime
- Salt and pepper, to taste
Instructions
- Whisk lime juice, zest, coconut milk, olive oil, garlic, red pepper flakes, salt, and pepper in a bowl. Add fish, coat well, cover, and chill for 15–20 minutes.
- Mix avocado, tomatoes, onion, lime juice, cilantro, salt, and pepper in a bowl. Toss gently and set aside.
- Heat a skillet over medium. Remove fish from marinade and cook 3–4 minutes per side, until it flakes easily.
- Top the fish with salsa and sprinkle with fresh cilantro. Add lime wedges.
Notes
- For a spicier kick, increase the amount of red pepper flakes.
- Ensure the fish is fresh for the best flavor.
- Can be served with rice or a side salad for a complete meal.
