- 1 lb large shrimp, peeled and deveined
- 1 cup coconut milk
- 1/4 cup fresh lime juice (about 2–3 limes)
- 2 tablespoons lime zest
- 2 tablespoons honey or agave syrup
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon red pepper flakes (optional for a kick)
- Salt and pepper to taste
- 1 cup unsweetened shredded coconut
- Skewers (wooden or metal, soaked in water if wooden)
Instructions
- Marinate the Shrimp: In a medium bowl, whisk together the coconut milk, lime juice, lime zest, honey, minced garlic, grated ginger, red pepper flakes, salt, and pepper. Add the peeled and deveined shrimp to the marinade, ensuring they’re fully submerged. Cover and refrigerate for at least 30 minutes, up to 2 hours for maximum flavor.
- Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, simply set them aside.
- Preheat the Grill: Preheat your grill or grill pan to medium-high heat. Make sure your cooking surface is clean and lightly oiled to prevent sticking.
- Coat the Shrimp: Remove the shrimp from the marinade and let any excess liquid drip off. In a shallow dish, spread out the shredded coconut. Roll each shrimp in the coconut until well coated.
- Skewer the Shrimp: Thread the coconut-coated shrimp onto the skewers, about 4-5 shrimp per skewer, leaving a little space between each for even cooking.
- Grill the Skewers: Place the skewers on the preheated grill. Cook for about 2-3 minutes on each side, or until the shrimp are opaque and the coconut is golden brown. Be careful not to overcook the shrimp as they can become tough.
- Serve and Enjoy: Once cooked, remove the skewers from the grill. Serve immediately with extra lime wedges and a sprinkle of lime zest for garnish. Pair with a fresh salad or steamed rice for a complete meal.
