Instructions
- Preheat oven to 350°F (175°C). Line your baking tray with parchment.
- Dissolve espresso powder in hot water.
- Cream vegan butter with brown and coconut sugar until fluffy.
- Mix in espresso and vanilla.
- Add flour, baking soda, and salt. Stir until it becomes a soft dough.
- Fold in chocolate chips.
- Scoop dough onto tray. Bake for 12 minutes or until golden around the edges.
- Cool cookies completely.
- For filling: beat vegan butter, powdered sugar, coffee, vanilla, and salt until smooth.
- Pair cookies by size. Spread or pipe coffee cream between them and enjoy.
