Description
A delightful and comforting dessert that combines the flavors of banana bread and cobbler, perfect for any occasion.
Ingredients
Scale
- 113 g unsalted butter, melted
- 120 g all-purpose flour
- 200 g granulated sugar
- 2 teaspoons baking powder
- 0.5 teaspoon salt
- 240 ml milk
- 1 teaspoon vanilla extract
- 3 ripe bananas, sliced
- 100 g light brown sugar, packed
- 0.5 teaspoon ground cinnamon
- 50 g chopped walnuts or pecans (optional)
- 85 g chocolate chips (optional)
Instructions
- Preheat oven to 190°C. Pour the melted butter into a 33 × 23 cm baking dish, tilting to ensure the base is evenly coated.
- In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt. Gradually add milk and vanilla extract, whisking until the batter is smooth and homogeneous.
- Gently pour the batter over the melted butter in the baking dish without stirring. The batter will self-layer during baking.
- Distribute the sliced bananas evenly over the batter, allowing them to settle naturally.
- Combine brown sugar and cinnamon in a small bowl. Sprinkle the mixture generously over the bananas and batter. If desired, scatter optional nuts or chocolate chips across the surface.
- Bake for 35–45 minutes until the cobbler is golden brown, bubbling at the edges, and a toothpick inserted near the center comes out with moist crumbs. Avoid overbaking.
- Allow to cool for 10–15 minutes to set before serving warm in bowls.
Notes
- For a richer flavor, consider using ripe bananas that are heavily speckled.
- Serve with a scoop of vanilla ice cream for an indulgent treat.
- Store leftovers in an airtight container in the refrigerator.
