- 1 cup buttermilk (or milk + 1 tbsp lemon juice)
- 1 cup cornmeal
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 cup all-purpose flour
- 1 cup smoked Gouda cheese, shredded
- 1/4 cup honey
- Fresh thyme or rosemary, for garnish (optional)
Instructions
- Preheat your waffle iron as directed.
- In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk buttermilk, melted butter, and egg.
- Combine both mixtures and stir until just mixed.
- Lightly grease the waffle iron.
- Add 1–2 tbsp of batter per section of the waffle iron.
- Cook for 3–4 minutes until crisp and golden.
- Let the waffles cool slightly on a wire rack.
- Preheat the oven to 350°F (175°C).
- Place the waffles on a baking sheet and sprinkle with smoked Gouda cheese.
- Bake for 3–5 minutes until the cheese melts.
- Drizzle with honey and garnish with herbs if using.
- Serve warm.
Notes
- For a tangier flavor, use buttermilk instead of regular milk.
- Feel free to experiment with different cheeses or toppings.
- These can be made ahead and reheated in the oven.
