Ingredients

  • 1 large egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 1 tablespoon honey
  • 4 ounces smoked salmon, sliced
  • 3.5 ounces cream cheese, softened
  • 1/2 small red onion, thinly sliced
  • 1 tablespoon capers, drained
  • 1 small cucumber, thinly sliced
  • Fresh dill for garnish
  • Freshly ground black pepper

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine cottage cheese and egg. Whisk until smooth and well incorporated.
  3. Add flour, baking powder, salt, and honey to the wet mixture. Stir until a shaggy dough forms.
  4. Turn dough onto a lightly floured surface and knead gently for 1 to 2 minutes until just combined and slightly tacky.
  5. Divide dough into 4 equal pieces. Roll each piece into a ball, poke a hole in the center, and shape into a bagel form.
  6. Place shaped bagels on the prepared baking sheet.
  7. Bake for 20 to 25 minutes until golden brown and cooked through. Transfer to a wire rack to cool completely.
  8. Once cooled, slice bagels horizontally. Toast lightly if desired.
  9. Spread softened cream cheese on each bagel half. Layer with smoked salmon, cucumber slices, red onion, and capers.
