- 1 tablespoon olive oil

- 6 cloves garlic, minced
- 2 large potatoes, peeled and diced

- 1/2 teaspoon ground black pepper
- 2 cups whole milk
- 1/2 cup heavy cream
- 1 tablespoon butter
- 2 slices French baguette, toasted
- 1/4 cup grated Gruyère cheese
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and cook for about 5 minutes until softened and translucent, stirring occasionally.
- Add the minced garlic to the pot and cook for an additional 1 minute, stirring constantly to avoid burning.
- Add the diced potatoes, chopped thyme, bay leaf, salt, and black pepper to the pot.
- Pour in the chicken broth, ensuring the ingredients are well-covered with liquid.
- Increase the heat and bring the mixture to a boil.
- Once boiling, reduce the heat to low and simmer for 20 minutes, or until the potatoes are tender.
- Remove the pot from the heat and discard the bay leaf.
- Using an immersion blender, carefully blend the soup until it reaches a smooth consistency.
- Alternatively, transfer the soup in batches to a regular blender and puree until smooth, then return to the pot.
- Stir in the whole milk and heavy cream, mixing well to combine.
- Place the pot back on the stove over medium heat and warm the soup through, without bringing it to a boil.
- In a small skillet, melt the butter over medium heat.
- Once melted, add the toasted French baguette slices to the skillet and cook for 2 minutes on each side, until crispy and golden brown.
- Ladle the soup into bowls and top each serving with a slice of the toasted baguette.
- Sprinkle the grated Gruyère cheese over the soup, allowing it to melt slightly.
- Serve the soup hot and enjoy the rich, creamy flavors.
