Description

A rich and creamy Country French Garlic Soup, perfect for garlic lovers and a comforting dish for any occasion.


Ingredients

  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 2 large potatoes, peeled and diced
  • 1 teaspoon fresh thyme, chopped
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 2 slices French baguette, toasted
  • 1/4 cup grated Gruyère cheese

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and cook for about 5 minutes until softened and translucent, stirring occasionally.
  3. Add the minced garlic to the pot and cook for an additional 1 minute, stirring constantly to avoid burning.
  4. Add the diced potatoes, chopped thyme, bay leaf, salt, and black pepper to the pot.
  5. Pour in the chicken broth, ensuring the ingredients are well-covered with liquid.
  6. Increase the heat and bring the mixture to a boil.
  7. Once boiling, reduce the heat to low and simmer for 20 minutes, or until the potatoes are tender.
  8. Remove the pot from the heat and discard the bay leaf.
  9. Using an immersion blender, carefully blend the soup until it reaches a smooth consistency.
  10. Alternatively, transfer the soup in batches to a regular blender and puree until smooth, then return to the pot.
  11. Stir in the whole milk and heavy cream, mixing well to combine.
  12. Place the pot back on the stove over medium heat and warm the soup through, without bringing it to a boil.
  13. In a small skillet, melt the butter over medium heat.
  14. Once melted, add the toasted French baguette slices to the skillet and cook for 2 minutes on each side, until crispy and golden brown.
  15. Ladle the soup into bowls and top each serving with a slice of the toasted baguette.
  16. Sprinkle the grated Gruyère cheese over the soup, allowing it to melt slightly.
  17. Serve the soup hot and enjoy the rich, creamy flavors.
