Description

Delicious and chewy cookies packed with oats, chocolate chips, coconut, and pecans.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, at room temperature
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 2 cups old-fashioned rolled oats
  • 1 ¼ cups sweetened flake coconut
  • 1 ¼ cups chopped pecans

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a large mixing bowl or the bowl of a stand mixer, beat butter until smooth and creamy, about 1 minute.
  4. Gradually add in both granulated sugar and brown sugar, and beat until fully combined.
  5. Add eggs, one at a time, mixing well after each addition. Add vanilla extract and mix until thoroughly incorporated.
  6. Gradually stir in the flour mixture until just combined.
  7. Stir in the chocolate chips, oats, coconut, and pecans.
  8. Using a large cookie scoop, scoop out 3 tablespoons of cookie dough, roll into balls, and place on an ungreased cookie sheet or silicone baking mat.
  9. Bake the cookies for 9 to 11 minutes, or until the cookies just start to turn golden brown on the edges. Do not overbake.
  10. Let the cookies rest for 5 minutes on the cookie sheet before transferring them to a wire rack to cool completely.

Notes

  • Do not overbake the cookies for the best chewy texture.
  • These cookies can be stored in an airtight container for up to a week.
  • Feel free to substitute chocolate chips with your favorite mix-ins such as dried fruits or nuts.
