Ingredients

  • 1 cup red lentils, rinsed
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1 cup diced carrots
  • 1 cup diced sweet potato
  • 1 cup spinach, roughly chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 4–5 minutes, until it becomes translucent.
  2. Add minced garlic and grated ginger, cooking for an additional 1–2 minutes until fragrant.
  3. Stir in the curry powder, ground cumin, and turmeric, allowing the spices to toast for about 1 minute, mixing well with the onion and garlic.
  4. Add the diced carrots and sweet potato to the pot, stirring to coat them in the spices. Cook for another 5 minutes, allowing the vegetables to soften slightly.
  5. Pour in the vegetable broth and coconut milk, bringing the mixture to a gentle boil.
  6. Stir in the rinsed lentils, reduce the heat to low, and let the soup simmer for 25–30 minutes, or until the lentils and vegetables are tender.
  7. Finally, add the chopped spinach and cook for an additional 5 minutes, just until the spinach has wilted.
  8. Season with salt and pepper to taste before serving.
  9. Ladle the soup into bowls and garnish with fresh cilantro.

  • Presentation Tips: Serve hot with a wedge of lime on the side, and a sprinkle of chopped cilantro on top for a pop of color.
