A delectable tart combining the creaminess of brie cheese with the sweetness of cranberry sauce, enhanced by crispy pancetta and fresh thyme.

- 1 sheet puff pastry, thawed
- 8 oz brie cheese, sliced
- 1/2 cup cranberry sauce
- 1/3 cup diced pancetta
- 1 tsp fresh thyme leaves
- 1 tbsp honey (optional)
Instructions
- Preheat oven to 400°F (200°C). Roll out puff pastry and place on a parchment-lined baking sheet. Score a 1-inch border around the edges without cutting through.
- Prick the center with a fork to prevent puffing. Bake for 10 minutes or until lightly golden.
- While pastry bakes, cook pancetta in a skillet until crispy. Drain and set aside.
- Layer brie slices over the center of the pre-baked pastry. Add dollops of cranberry sauce. Sprinkle cooked pancetta over the top.
- Bake again for 10–12 minutes until brie is melted and pastry is golden brown.
- Remove from oven, top with thyme and drizzle with honey if using. Rest 5 minutes, then slice and serve.
Notes
- Use all-butter puff pastry for the best flavor and flakiness.
- Don’t overload the tart with cranberry sauce—just enough to balance the richness.
- Bake on parchment to prevent sticking and for easy cleanup.
