- 340 g fresh cranberries
- 200 g granulated sugar
- 225 g crushed pineapple, undrained
- 115 g cream cheese, softened
- 480 ml heavy whipping cream
- 100 g mini marshmallows
Instructions
- Using a food processor, pulse cranberries until finely chopped but not pureed.
- Transfer chopped cranberries to a large bowl. Add sugar and crushed pineapple with juice, stirring to combine thoroughly. Cover and refrigerate for one hour to allow flavors to meld.
- In a medium bowl, beat softened cream cheese until smooth. Gradually add heavy whipping cream, whisking continuously until stiff peaks form.
- Drain excess juice from the chilled cranberry mixture. Gently fold the whipped cream cheese mixture into the cranberries until fully incorporated.
- Gently fold in mini marshmallows. Refrigerate the dish until well chilled before serving.

- Ensure the cream cheese is softened to make mixing easier.
- For best results, allow the salad to chill for at least 2 hours before serving.
