Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup orange juice
  • 1/4 cup chicken broth
  • 1 tablespoon brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon grated orange zest
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season both sides of the chicken breasts with salt, pepper, garlic powder, and ground ginger.
  3. Place the chicken breasts in the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through.
  4. Remove the chicken from the skillet and set it aside on a plate.
  5. In the same skillet, add the fresh cranberries, orange juice, chicken broth, brown sugar, Dijon mustard, and grated orange zest.
  6. Stir the ingredients together, making sure the sugar dissolves.
  7. Bring the mixture to a simmer over medium heat, stirring occasionally, and cook for about 5 minutes, or until the cranberries start to pop.
  8. Reduce the heat to low and return the chicken breasts to the skillet.
  9. Spoon some of the cranberry-orange sauce over the chicken.
  10. Cover the skillet and simmer for an additional 5 minutes, allowing the flavors to meld.
  11. Remove the chicken from the skillet and place it on serving plates.
  12. Increase the heat to medium-high and cook the sauce for an additional 2-3 minutes, letting it thicken slightly.
  13. Spoon the sauce over the chicken breasts and serve immediately.

Notes

  • The chicken breasts should be patted dry before seasoning to ensure a nice sear.
  • If you prefer a sweeter sauce, you can adjust the amount of brown sugar to taste.
  • For extra depth of flavor, try adding a splash of balsamic vinegar to the sauce as it simmers.
  • You can substitute the fresh cranberries with frozen cranberries if fresh are unavailable, but thaw them first.
