Description
Cranberry Orange Chicken is a flavorful dish featuring tender chicken breasts coated in a tangy cranberry-orange sauce, perfect for any occasion.
Ingredients
Scale
- 2 chicken breasts
- 1 tablespoon olive oil
- 1/2 cup fresh cranberries
- 1/4 cup orange juice
- 1/4 cup chicken broth
- 1 tablespoon brown sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon grated orange zest
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season both sides of the chicken breasts with salt, pepper, garlic powder, and ground ginger.
- Place the chicken breasts in the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the skillet and set it aside on a plate.
- In the same skillet, add the fresh cranberries, orange juice, chicken broth, brown sugar, Dijon mustard, and grated orange zest.
- Stir the ingredients together, making sure the sugar dissolves.
- Bring the mixture to a simmer over medium heat, stirring occasionally, and cook for about 5 minutes, or until the cranberries start to pop.
- Reduce the heat to low and return the chicken breasts to the skillet.
- Spoon some of the cranberry-orange sauce over the chicken.
- Cover the skillet and simmer for an additional 5 minutes, allowing the flavors to meld.
- Remove the chicken from the skillet and place it on serving plates.
- Increase the heat to medium-high and cook the sauce for an additional 2-3 minutes, letting it thicken slightly.
- Spoon the sauce over the chicken breasts and serve immediately.
Notes
- The chicken breasts should be patted dry before seasoning to ensure a nice sear.
- If you prefer a sweeter sauce, you can adjust the amount of brown sugar to taste.
- For extra depth of flavor, try adding a splash of balsamic vinegar to the sauce as it simmers.
- You can substitute the fresh cranberries with frozen cranberries if fresh are unavailable, but thaw them first.
- Serve the chicken over rice, quinoa, or a bed of greens to soak up the flavorful sauce.
