Description

Delicious scones flavored with cranberry, orange, and maple, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup heavy cream, plus additional for brushing
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon finely grated orange zest
  • 1 cup fresh or frozen cranberries, halved
  • 1 cup sifted powdered sugar (for glaze)
  • 2 tablespoons pure maple syrup (for glaze)
  • 12 tablespoons milk or cream (for glaze)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. Add the cold, cubed unsalted butter to the dry ingredients and cut it into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together heavy cream, egg, vanilla extract, and orange zest. Pour this wet mixture over the dry ingredients and gently mix until just combined.
  5. Carefully fold in the halved cranberries into the dough.
  6. Turn the dough out onto a lightly floured surface and pat it into a circle approximately 1 inch thick. Cut into 8 equal wedges.
  7. Transfer the cut scone wedges to the prepared baking sheet and brush the tops with additional heavy cream.
  8. Bake for 16–18 minutes, or until golden brown and set. Let cool on a wire rack.
  9. For the glaze, whisk together the sifted powdered sugar, pure maple syrup, and enough milk or cream to achieve a thick yet pourable consistency. Drizzle evenly over the cooled scones.

Notes

  • Ensure not to overmix the dough to keep the scones light and fluffy.
  • Feel free to substitute cranberries with other berries if preferred.
