Ingredients

- 1½ cups room-temperature water
- 2–3 tablespoons honey
- 1 teaspoon active dry yeast
- 3 cups bread flour or all-purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- ¾ cup dried cranberries
- ½–¾ cup raisins
- ½ cup chopped walnuts
Instructions
- Stir water and honey, sprinkle yeast, and let it rest until foamy.
- Combine dry ingredients in a bowl.
- Mix wet and dry ingredients until shaggy.
- Cover and let rise for 8–10 hours.
- Shape the dough and refrigerate overnight.
- Preheat the Dutch oven to 450°F.
- Score the dough and bake covered for 30 minutes.
- Uncover and bake for an additional 15–20 minutes.
- Cool before slicing.
Notes
- Ensure the yeast is active for the best rise.
- Adjust the amount of raisins according to your preference.
- For a crustier bread, you can bake it on a pizza stone instead of a Dutch oven.
