Description

A delicious and indulgent French toast filled with creamy cheese and topped with a sweet blackberry compote.

Ingredients

Scale
  • 8 slices thick-cut bread (brioche or French)
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup blackberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 4 large eggs
  • 1 cup milk
  • 1/2 tsp ground cinnamon
  • Butter or oil (for cooking)
  • Maple syrup (for serving)

Instructions

  1. In a small saucepan, combine blackberries, granulated sugar, and lemon juice. Cook over medium heat until the mixture begins to bubble and thicken, about 5-7 minutes. Set aside.
  2. In a bowl, blend softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Take two slices of thick-cut bread and spread a generous amount of the cream cheese mixture on one slice. Top with another slice to create a sandwich.
  4. In a shallow dish, whisk together eggs, milk, and ground cinnamon.
  5. Dip each sandwich into the egg mixture, ensuring both sides are well-coated.
  6. In a skillet over medium heat, add butter or oil. Cook each sandwich for about 3-4 minutes per side, or until golden brown.
  7. Once cooked, serve the French toast hot, drizzled with warm blackberry compote and a side of maple syrup.

Notes

  • For a richer flavor, use homemade bread.
  • Feel free to substitute blackberries with other berries if desired.
  • Ensure the skillet is preheated for best results when cooking the French toast.
