Description
A delicious and indulgent French toast filled with creamy cheese and topped with a sweet blackberry compote.
Ingredients
Scale
- 8 slices thick-cut bread (brioche or French)
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup blackberries
- 2 tbsp granulated sugar
- 1 tbsp lemon juice
- 4 large eggs
- 1 cup milk
- 1/2 tsp ground cinnamon
- Butter or oil (for cooking)
- Maple syrup (for serving)
Instructions
- In a small saucepan, combine blackberries, granulated sugar, and lemon juice. Cook over medium heat until the mixture begins to bubble and thicken, about 5-7 minutes. Set aside.
- In a bowl, blend softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Take two slices of thick-cut bread and spread a generous amount of the cream cheese mixture on one slice. Top with another slice to create a sandwich.
- In a shallow dish, whisk together eggs, milk, and ground cinnamon.
- Dip each sandwich into the egg mixture, ensuring both sides are well-coated.
- In a skillet over medium heat, add butter or oil. Cook each sandwich for about 3-4 minutes per side, or until golden brown.
- Once cooked, serve the French toast hot, drizzled with warm blackberry compote and a side of maple syrup.
Notes
- For a richer flavor, use homemade bread.
- Feel free to substitute blackberries with other berries if desired.
- Ensure the skillet is preheated for best results when cooking the French toast.
