Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion to the pot and sauté for about 5 minutes, or until the onion becomes soft and translucent.
  3. Add the minced garlic and cook for another 1-2 minutes, stirring frequently, until fragrant.
  4. Add the diced potatoes to the pot and stir to combine with the onions and garlic.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Cover the pot and let it simmer for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.
  7. Add the frozen corn kernels to the pot and stir to incorporate.
  8. Continue to simmer the chowder for another 5-7 minutes, allowing the corn to heat through.
  9. Reduce the heat to low and slowly stir in the heavy cream and whole milk until the chowder reaches a creamy consistency.
  10. Season the chowder with salt, black pepper, and smoked paprika, stirring well to combine.
  11. Let the chowder simmer for an additional 3-5 minutes to allow the flavors to meld together.
  12. Taste the chowder and adjust the seasonings if needed, adding more salt or pepper as desired.
  13. Remove the pot from the heat and stir in the chopped fresh parsley for added flavor and color.
  14. Serve the creamy corn chowder hot, garnished with extra parsley if desired.
