Scale
- 2 tablespoons butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 2 cups frozen corn kernels
- 1 cup heavy cream
- 1 cup whole milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion to the pot and sauté for about 5 minutes, or until the onion becomes soft and translucent.
- Add the minced garlic and cook for another 1-2 minutes, stirring frequently, until fragrant.
- Add the diced potatoes to the pot and stir to combine with the onions and garlic.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Cover the pot and let it simmer for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.
- Add the frozen corn kernels to the pot and stir to incorporate.
- Continue to simmer the chowder for another 5-7 minutes, allowing the corn to heat through.
- Reduce the heat to low and slowly stir in the heavy cream and whole milk until the chowder reaches a creamy consistency.
- Season the chowder with salt, black pepper, and smoked paprika, stirring well to combine.
- Let the chowder simmer for an additional 3-5 minutes to allow the flavors to meld together.
- Taste the chowder and adjust the seasonings if needed, adding more salt or pepper as desired.
- Remove the pot from the heat and stir in the chopped fresh parsley for added flavor and color.
- Serve the creamy corn chowder hot, garnished with extra parsley if desired.
Notes
- For a vegetarian version, ensure the vegetable broth is vegetable-based.
- This chowder can be stored in the refrigerator for up to 3 days.
- Reheat gently on the stove while stirring to maintain creaminess.
