Ingredients

  • 1 pound boneless, skinless chicken breasts, chopped into bite-sized pieces
  • 16 ounces fresh or frozen gnocchi
  • 8 ounces cream cheese, block
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 0.5 cup crispy bacon bits
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • To taste salt and pepper

Instructions

  1. Chop the chicken into bite-sized pieces.
  2. Heat a splash of oil in a skillet over medium-high heat.
  3. Add the chicken and cook until golden brown for about 5 to 7 minutes.
  4. Lower the heat and add the cream cheese and chicken broth to the pan.
  5. Stir gently until the cream cheese melts and the sauce becomes smooth.
  6. If the sauce is too thick, add a splash more broth.
  7. Add the gnocchi and spinach to the skillet.
  8. Cover the skillet and let it simmer for about 5 to 7 minutes.
  9. Stir occasionally to ensure cooking, making sure the gnocchi becomes tender and the spinach wilts.
  10. Remove the lid and stir in the shredded cheddar cheese and crispy bacon bits.
  11. Allow the cheese to melt into the sauce.
  12. Ladle the dish generously into bowls and sprinkle more cheese on top if desired.
