Description

A delightful and creamy whipped ricotta cheese served with sweet roasted grapes, perfect as an appetizer or a light dessert.


Ingredients

  • 1 cup ricotta cheese
  • 1/4 cup heavy cream
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 2 cups red or green grapes, washed and stemmed
  • 1 tablespoon olive oil
  • Fresh rosemary or thyme sprigs (for garnish)
  • Toasted bread or crackers (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine the grapes with olive oil and sprinkle with a pinch of salt. Toss to coat evenly. Roast the grapes in the preheated oven for about 20-25 minutes, or until they are blistered and soft. Stir halfway through for even roasting. Remove from the oven and let cool slightly.
  3. In a medium bowl, combine the ricotta cheese, heavy cream, honey, vanilla extract, and sea salt. Using an electric mixer or a whisk, whip the mixture until smooth, creamy, and fluffy, about 3 minutes.
  4. Spoon the whipped ricotta into a serving bowl. Create a nest for the roasted grapes in the center and pour any juices from the baking dish over the top.
  5. Finish with fresh rosemary or thyme sprigs for added flavor and presentation. Serve with toasted bread or crackers on the side for dipping.
