- 2 cups red or green grapes, washed and stemmed

Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine the grapes with olive oil and sprinkle with a pinch of salt. Toss to coat evenly. Roast the grapes in the preheated oven for about 20-25 minutes, or until they are blistered and soft. Stir halfway through for even roasting. Remove from the oven and let cool slightly.
- In a medium bowl, combine the ricotta cheese, heavy cream, honey, vanilla extract, and sea salt. Using an electric mixer or a whisk, whip the mixture until smooth, creamy, and fluffy, about 3 minutes.
- Spoon the whipped ricotta into a serving bowl. Create a nest for the roasted grapes in the center and pour any juices from the baking dish over the top.
- Finish with fresh rosemary or thyme sprigs for added flavor and presentation. Serve with toasted bread or crackers on the side for dipping.
