Creamy Marry Me Chicken Meatballs are a delightful dish featuring tender chicken meatballs in a rich, creamy sauce with sun-dried tomatoes and Parmesan cheese.

- 1 lb ground chicken
- 1/3 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil (for browning)
- 1 tbsp olive oil or butter
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 tsp red pepper flakes
- 1 tsp Italian seasoning
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 1/3 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- In a large bowl, combine ground chicken, Parmesan, breadcrumbs, egg, garlic, onion powder, oregano, salt, pepper, and parsley. Mix gently until just combined.
- Roll into 1 to 1.5-inch meatballs. Lightly oil your hands to prevent sticking.
- Heat olive oil in a large skillet over medium heat. Brown meatballs on all sides for 5–6 minutes. Remove and set aside.
- In the same skillet, add olive oil or butter. Sauté garlic for 30 seconds, then stir in sun-dried tomatoes and red pepper flakes. Cook for 2–3 minutes.
- Pour in chicken broth, scraping any brown bits. Let simmer for 2 minutes.
- Reduce heat and slowly add heavy cream, Italian seasoning, and Parmesan. Stir until smooth and slightly thickened.
- Return meatballs to skillet. Spoon sauce over them, cover, and simmer for 10–12 minutes until meatballs are cooked through.
- Taste and adjust seasoning. Garnish with basil or parsley and serve hot.
Notes
- You can use turkey or beef if preferred.
- Adjust the red pepper flakes according to your spice tolerance.
- Serve with pasta, rice, or bread for a complete meal.
