- 1 cup orzo pasta
- 2 cups butternut squash, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cinnamon

- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh sage, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- On a baking sheet, toss the diced butternut squash with olive oil, salt, black pepper, cinnamon, and nutmeg. Spread it out in a single layer and roast for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- While the squash is roasting, bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat the vegetable broth over medium heat. Stir in the heavy cream and bring to a gentle simmer. Add the cooked orzo to the skillet and mix well, allowing the pasta to absorb some of the broth.
- Once the butternut squash is done roasting, gently fold it into the orzo mixture along with the grated Parmesan cheese and chopped sage. Stir until everything is well combined and heated through. Adjust seasoning with salt and pepper to taste.
- Serve warm, garnished with additional sage and Parmesan if desired.

- For a vegan version, substitute heavy cream with coconut cream and omit Parmesan cheese.
