- 8 oz (225g) uncooked pasta
- 1 tablespoon olive oil
- 1 tablespoon butter
- 7 oz (200g) cremini mushrooms, sliced
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 clove garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Cajun seasoning or smoked paprika
- 1 pound (450g) cooked prime rib, sliced into bite-size pieces
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a medium saucepan of water to a boil and salt it generously.
- Add pasta and cook according to package instructions until al dente.
- Reserve 1 cup of pasta water and drain the pasta.
- In a skillet over medium heat, melt the butter with olive oil.
- Add the sliced mushrooms, season with salt and pepper, and cook for 3–4 minutes until tender.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Pour in the heavy cream and add the Parmesan cheese and Cajun seasoning.
- Stir until the cheese melts and the sauce is smooth.
- Loosen the sauce with reserved pasta water and let it simmer for 1 minute. Taste and adjust seasoning if needed.
- Toss the cooked pasta in the sauce until evenly coated.
- Gently fold in the prime rib to warm through.
- Garnish with freshly chopped parsley and serve immediately.

- For a lighter option, you can use half-and-half instead of heavy cream.
- Ensure the prime rib is pre-cooked to avoid overcooking it in the sauce.
