- 1.5 lbs boneless skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 4 cloves garlic minced
- 1 small onion finely chopped
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt to taste
- Black pepper to taste
- 2 tablespoons chopped fresh parsley
- 4 cups cooked white rice
Instructions
- Season diced chicken with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high. Sear chicken until golden brown and cooked through. Remove and set aside.
- Lower heat to medium. Add chopped onion and minced garlic to the skillet. Sauté until fragrant and soft.
- Pour in chicken broth and scrape up brown bits. Let it simmer for a minute.
- Add heavy cream and Italian seasoning. Stir and simmer until sauce thickens slightly.
- Return seared chicken to the skillet. Simmer together for 8-10 minutes.
- Spoon creamy chicken mixture over cooked rice.
- Garnish with chopped parsley and serve warm.
Notes
- If using chicken thighs, trim excess fat for an even cook and rich flavor.
- Always sauté garlic on medium heat to avoid bitterness.
- Let the sauce rest for a couple of minutes before serving for better texture.
