Description

Creamy Spinach White Bean Quesadillas are a delicious, cheesy delight filled with nutritious spinach and white beans.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 can (15 oz) white beans (cannellini or navy), drained and rinsed
  • 1 cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Olive oil for frying

Instructions

  1. In a mixing bowl, combine the chopped spinach, drained white beans, cream cheese, mozzarella, Parmesan, minced garlic, onion powder, smoked paprika, salt, and pepper. Mix until well combined to create a creamy filling.
  2. Heat a large skillet over medium heat and add a small drizzle of olive oil.
  3. Place one tortilla in the skillet and spoon a generous amount of the creamy spinach filling onto half of the tortilla, then fold the other half over to create a half-moon shape.
  4. Cook for about 3-4 minutes or until the bottom of the quesadilla is golden brown and crispy. Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side.
  5. Repeat the process with the remaining tortillas and filling, adding more olive oil to the skillet as needed.
  6. Once all quesadillas are cooked, remove them from the skillet and let them cool for a minute before slicing into wedges.
