Description

A deliciously crispy air fryer recipe for cod fillets, coated in a flavorful Parmesan mixture.

Ingredients

Scale
  • 4 cod fillets – about 6 oz each, fresh or thawed if frozen
  • 1 cup panko breadcrumbs – for that signature airy crunch
  • ½ cup Parmesan cheese, finely grated – the star of the crust
  • 1 tsp garlic powder – brings warm, savory depth
  • 1 tsp onion powder – adds a subtle sweetness
  • 1 tsp dried oregano – a hint of herby flavor
  • ½ tsp paprika – for smoky color and a little kick
  • Salt & black pepper – to season every bite
  • 2 tbsp fresh parsley, chopped – optional, but makes it pop
  • ¼ cup mayonnaise – helps the coating stick and keeps fish moist
  • 1 tbsp Dijon mustard – adds tang and brightness
  • 1 tbsp lemon juice – freshens up the flavor

Instructions

  1. Pat the cod fillets dry with paper towels — moisture is the enemy of crispiness. Season both sides with a light sprinkle of salt and pepper.
  2. In a shallow bowl, stir together panko breadcrumbs, Parmesan, garlic powder, onion powder, oregano, paprika, and a pinch of salt and pepper.
  3. In a separate small bowl, combine mayo, Dijon mustard, and lemon juice. This zesty mix doubles as both a coating and a flavor booster.
  4. Brush one side of each fillet with the mayo mixture. Press that side firmly into the breadcrumb-Parmesan blend, making sure it’s completely covered. (Pro tip: a thicker coating = extra crunch!)
  5. Set your air fryer to 400°F (200°C) and let it preheat for about 5 minutes. A hot fryer means crispier fish.
  6. Lightly mist the air fryer basket with cooking spray. Arrange fillets in a single layer with space between them — no crowding allowed. Cook for 10–12 minutes, flipping halfway through if needed. The fish is done when the crust is deep golden and the internal temperature hits 145°F (63°C).
  7. Remove the fillets carefully and top with fresh parsley. Serve hot with lemon wedges, a green salad, or roasted vegetables for a balanced, beautiful plate.

Notes

  • Ensure the cod is thoroughly dry before coating for the best crispiness.
  • Feel free to adjust the spices according to your taste.
  • This dish pairs well with various side dishes for a complete meal.
