Description

Crispy Bacon Honey Roasted Potatoes are a delightful combination of crispy bacon, tender potatoes, and a sweet touch of honey.


Ingredients

  • 2 lbs (900g) baby potatoes, halved
  • 6 slices bacon, chopped
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the potatoes, then cut them in half for even cooking.
  3. Chop the bacon into small pieces to allow it to crisp up and distribute evenly.
  4. In a large mixing bowl, combine the potatoes, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat.
  5. Spread the potatoes out on the prepared baking sheet in a single layer, making sure they are not overcrowded.
  6. Scatter the chopped bacon evenly over the potatoes.
  7. Place the baking sheet in the preheated oven and roast for 30-35 minutes, flipping halfway through to ensure even crispiness.
  8. During the last 5 minutes of roasting, drizzle the honey over the potatoes and bacon. Return to the oven and roast until caramelized and golden brown.
  9. Remove from the oven and let the potatoes cool slightly.
  10. Sprinkle with fresh parsley for added color and freshness.
