- 6 slices bacon, chopped
- 3 tbsp olive oil
- 2 tbsp honey
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and dry the potatoes, then cut them in half for even cooking.
- Chop the bacon into small pieces to allow it to crisp up and distribute evenly.
- In a large mixing bowl, combine the potatoes, olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat.
- Spread the potatoes out on the prepared baking sheet in a single layer, making sure they are not overcrowded.
- Scatter the chopped bacon evenly over the potatoes.
- Place the baking sheet in the preheated oven and roast for 30-35 minutes, flipping halfway through to ensure even crispiness.
- During the last 5 minutes of roasting, drizzle the honey over the potatoes and bacon. Return to the oven and roast until caramelized and golden brown.
- Remove from the oven and let the potatoes cool slightly.
- Sprinkle with fresh parsley for added color and freshness.
