- 1 medium head of cauliflower, cut into bite-sized florets
- 1 cup breadcrumbs (panko for extra crunch)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 large eggs, beaten
- 1/4 cup olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to ensure the spices are evenly distributed.
- In another bowl, whisk the eggs and add the olive oil, mixing until combined.
- Dip each cauliflower floret into the egg mixture, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere. Place the coated florets on the prepared baking sheet in a single layer.
- Bake in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and crispy, flipping halfway through for even cooking.
- Once baked, remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
Notes
- For extra crunch, use panko breadcrumbs.
