Instructions
- Pat the salmon fillets dry with paper towels to ensure a crispy texture.
- Cut the salmon into 1-inch bite-sized cubes.
- In a bowl, drizzle the salmon pieces with olive oil. Sprinkle with garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. Toss gently to coat evenly.
- In a mixing bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth and creamy. Taste and adjust by adding more sriracha for heat or honey for sweetness. Set aside.
- Heat a large non-stick skillet over medium-high heat and add a small amount of olive oil.
- Place the salmon pieces in a single layer, ensuring not to overcrowd the pan. Cook in batches if needed.
- Sear the salmon for 2-3 minutes per side, gently turning to brown all sides. Cook until the salmon is golden and crispy outside, tender and flaky inside.
- Transfer cooked salmon bites to a plate lined with paper towels to absorb excess oil.
- Drizzle the sauce over the salmon bites on a serving platter or place the salmon in a bowl and toss gently with the sauce for full coverage.
- Sprinkle with fresh parsley, green onions, or sesame seeds for an extra burst of flavor.
- Serve immediately while crispy.

- For extra heat, adjust the amount of sriracha in the Bang Bang Sauce.
